Hello!

 Hello my name is JuliaO a.k.a. the Food Fairy. Bringing delicious meals  to your table in a snap is my specialty. I live in Atlanta Georgia.  I believe time is  better spent eating and enjoying then paining away at the kitchen. Time  spent around the table creates magical memories that will last a  lifetime. Please enjoy this website where food recipes will not take all day in  the kitchen but rather a few simple steps after a workday. With all the  responsibilities that comes with kids I understand the need to have a  nice meal in a snap. Or as kids move out easy and fresh homemade meals  are a must. With these recipes I hope you and your family will enjoy  fresh homemade meal.

Easy Peasy Crockpot Recipe

3 to 5 Boneless Chicken Breast

1 16 oz jar Pace Picante Sauce – Medium

Cheese Sauce – see recipe below


Some suggested garnishes:

Sour Cream

Pickled Jalapeno

Black Olives

Guacamole



Crockpot Directions:

Place all boneless chicken breast in a crockpot

Pour Picante Sauce all over chicken

Cook low 4 to 6 hours

(Can use frozen chicken breast giving a 7 to 9 hour cooking time)


Oven Directions:

Place all boneless chicken breast in a 9x13 baking


After cooking (crockpot or oven) Break up chicken by mashing with a potato masher and/or pulling apart

Drain meat in colander pressing out excess but not all sauce out with back of big spoon

Serve over corn tortilla chips topped with Cheese Sauce


CHEESE SAUCE

½ lb White American Cheese from grocery deli

1/3 cup milk


Place cheese and milk into high sided microwave bowl as mixture will bubble up and could overflow – a large mixing bowl works well.

Microwave on high for 7 minutes

Remove from microwave and whisk cheese and milk mixture until all is blended smooth. If need more liquid add milk 1 tablespoon at a time.

Serve as a cheese dip or a sauce




Hamburger Slider (Oven Baked)

Hamburger Sliders that cook up fast in the oven while you relax.

5 minutes prep time and 20 minute cook time what’s not to like about this fast food twin. Add some carrot chips and dinner is done. For fun cut the burgers to fit on hot dog buns and have what we call BurgerDogs.

Makes 12 Sliders/Hamburgers

1/2 cup - Dried onion flakes

2 pounds - Ground beef - 93/7% Best - 90/10% Good – 80/20% Usable

12 – American Cheese Slices

12 - Hamburger Rolls – Regular Sized

12 - Dill Pickles Slices

Evenly spread the onions on the bottom of a 9x13 inch baking dish.

Gently press the ground beef on top of the onion flakes.

Press evenly making one giant patty.

Sprinkle with Spike Seasonings or Seasoned Salt.

Bake in a 400 degree oven for 15 to 20 minutes.

Using a paper towel, pat the excess grease from the top of the patty.

Top with American Cheese Slices

Return to oven for 2 to 5 minutes until cheese is melted

Remove from oven and let stand 5 minutes

Cut into 12 patties

Using a spatula lift a patty with onion layer onto each bun bottom.

Top each slider with a pickle slice then the bun top.

Serve immediately

Makes 12 Hamburger Sliders

Can store sliders upside-down in an airtight container in the refrigerator

This prevents bottom bun from getting soggy from the onion layer

Reheat in the microwave for 20 to 30 seconds

Tortilla Soup

Enjoy this quick and easy mexican soup cooked in a snap.

   Open 5 cans bring to boil while deboning 1 rotisserie chicken and dinner is done.  
     
  1 16 oz jar Verde (Green) Salsa  
  1 16 oz jar Picante Sauce - Mild  
  1 32 oz box Chicken Broth  
  1 11.5 oz can white corn – drained and rinsed  
  1 16oz can black beans – drained and rinsed  
  1 Rotisserie Chicken – deboned  
  1 Bag Tortilla Chips  
  Cheese, sour cream, green onions, salsa as preferred  
  Pour first five ingredients – Salsa, Picante Sauce, Chicken Broth, white corn and black beans into a soup pot bring to a boil. While this mix is coming to a boil debone rotisserie chicken adding chicken to pot. When soup reaches a boil turn off and serve with tortilla chips  
  NOTE: Can double or triple, etc recipe. Only 1 Rotisserie Chicken is needed if doubled or tripled sometimes even if quadrupled depending on how meaty a soup is desired.
